Sunday Pancakes



This was our lazy Sunday breakfast



American pancakes with blueberries picked last fall...



... and crisp bacon



accompanied by orange juice

Recipe:

300g cottage cheese
4 eggs
4 tablespoons sugar (or less)
1 ¾ liter of milk
130g flour
1 tsp baking powder
½ tsp baking soda
1tsp vanilla essence/vanilla sugar

  1. Ohhh, yum. Yum, yum, yum. When I make myself pancakes, I generally through together whatever ingredients I have on hand that seem relevant - sometimes apple sauce, sometimes yogurt, whatever. But when I go out, it's sourdough pancakes all the way. Mmm...

  4. These look fantastic! I don't make pancakes often, but I should change that fact. This past weekend I ate some excellent buckwheat pancakes at the sweet little Pine Cone Diner in Point Reyes Station.

  11. OK, I have to admit that I've never heard of these pancakes. I will absolutely try this recipe! We have been known to have pancakes for dinner.

    Here is a classic midwest recipe, but you have to add buttermilk which is sort of a soured milk.

    * 3 cups all-purpose flour
    * 3 tablespoons white sugar
    * 3 teaspoons baking powder
    * 1 1/2 teaspoons baking soda
    * 3/4 teaspoon salt
    * 3 cups buttermilk
    * 1/2 cup milk
    * 3 eggs
    * 1/3 cup butter, melted

    Mix the dry - then the wet - then add the two together just before cooking with a wooden spoon so it's not over mixed.

    Ladle 1/2 cup (4 oz.) of batter onto a hot griddle (we butter our griddle or use the bacon fat - that's why we're all so chubby over here).

    My grandpa always served these with chokecherry syrup which is probably like lingon berry but maybe a bit more tart.

    We would always try to get the first batch because it would absorb all of the sausage/bacon fat from the griddle. Hm. I think I might have to run to the grocery store.

  15. Thank you for sharing your pancake recipes ladies. Next time I will try one of your recipes, and I need to buy some maple syrup (because we are out of blueberries).

    Rani: I think the euivalent of buttermilk would be "kultur melk" or "kefir" I will try one of these and see how they turn out.
